This delicious quinoa and black bean salad is my kids favorite from all of the recent recipes that I have tried.
Quinoa: 2 cups quinoa, 3.5 cups water, 1/4 teaspoon salt
Salad: 1 cup chopped fresh cilantro, 2 cups cooked black beans, 5 sliced green onions, 1 finely diced jalapeño pepper, 1 diced small red bell pepper
Dressing: 1/4 cup olive oil, 1/2 cup lime juice, 1 teaspoon ground cumin, 1 teaspoon sea salt
I leave out the jalapeño because I’m a wimp when it comes to hot spices. My kids will ask for seconds every time and it is my husband’s new favorite.
